2 large sweet potatoes
Smoke on pellet grill for 2.5 hrs at 375
When soft, cut down the center and add a buttery glaze with brown sugar and smoked pecan reserve finishing dust along with some cinnamon. Add a few crispy bacon pieces for creating a balance of sweet, salty and nutty.

Get grill up to 400
For cleanest version - Place bacon in aluminum tin with space in between each piece. Cook for approximately 12 minutes. Remove bacon using gloves, carefully drain the fat, blot the top with paper towel and place pan back on grill. Sprinkle with Pecan Reserve and cook 3 to 4 more min. For a spicy kick - sprinkle with pepper and a dash of chili powder.

Once you add the butter to your warm pancakes, sprinkle with Pecan Reserve for a delicious tongue smacking finish.
